This vegan cajun rice recipe gets your veggies, starch, and protein in one bowl. I adapt this for my kids, who haven’t inherited my preference for tasty foods by limiting the cajun seasoning to 1 teaspoon. I like to serve this with veggie sausages, but it makes a complete meal on it’s own. We often have a hectic schedule when the kids start school in the fall. This is something I can make ahead pretty quickly, and warm it up when we get home. It gets even better the longer it sits!
