This vegetarian tortellini salad is perfect for a quick summer dinner, or your contribution to a pot luck BBQ. My family eats this for dinner without needing much else – it has several cheeses for protein, tomatoes for veggies, pasta for starch, and interesting flavors from olives, balsamic, and fresh basil.
Vegetarian Tortellini Salad Recipe
- Prepare tortellini according to package directions. Drain, rinse and set aside.
- While tortellini is cooking, in a large mixing bowl, gently mix everything except for the tortellini and cheese. Season with salt and pepper.
- Gently mix in tortellini and cheese.
- Transfer to a serving bowl and enjoy!
